Chili !

 

On this cold and chilly day, I am glad I was prepared to make my homemade chili. If I do say so myself, it is a deelicious recipe! I kinda made it up, as are most of my go-to recipes. Brown lean ground beef in a dutch oven until it is in tiny crumbles, add two to three chopped onions and lots of chili powder to taste and smell. If I was to guess, I probably put in three-fourths of a cup. I like it spicy! To that I add two large cans of diced tomatoes, rinsing each can with water and pouring that into the pot as well. One can of red kidney beans, or any other kind of canned bean, rinsed and drained before putting them into the pot. If I have a bell pepper or two, I chop those up and throw them in as well. A good teaspoon of salt and pepper, measured by the palm method goes in and I bring it to a boil; then reduce to simmer for as long as you can stand it before bringing out the bowls and spoons. If time, the perfect companion is cornbread muffins. I grew up eating cornbread cooked in a cast iron skillet. However, muffins get crispier on all sides, and can be easily saved in a ziplock bag. After several games of scrabble and bowls of chili, it is time to drift off for an afternoon snooze. The only thing that could have made this snowy day even more perfect, was to have the snow stick around longer. Walking-no-plowing through the snow in boots, hat, scarf, coat, and at least two pairs of jeans at once, makes for a delightful adventure, especially if it is actually snowing at the time!

Does it snow in Heaven? I wonder. When it snows here, it gives the world around the appearance of complete purity and cleanliness; the snow’s reflected light shines with angelic brilliance! All is right with the world; all stop for rest, reflection, relaxation-at least in the South!

Dear Lord, I know nothing can possibly compare to the beauty of heaven, nor to the purity and brilliance of the Light of Love all ’round! Yet, snow gives me a brief glimpse, a window through which I can imagine! I long for snowy days for so many reasons. Nature teaches me many things about You, Dear Lord. Water transforms into crystal flakes, each unique in design and beauty, and drifts down onto all below. White flake upon flake combine and cover over all the imperfections, flaws, and uncleanliness. All creation is made new-pure and blameless. Make me new, Dear Lord; take my life and transform it; use what is unique and beautiful; recreate that which is unclean, flawed, loveless, and chilling; warm me with Your Love Light; help me shine with the light that can only come from the ‘Son’.   Amen

 

 

Again Jesus spoke to them, saying, “I am the light of the world. Whoever follows me will not walk in darkness, but will have the light of life.” John 8:12

The light shines in the darkness, and the darkness has not overcome it.  John 1:5

In the same way, let your light shine before others, so that they may see your good works and give glory to your Father who is in heaven. Matthew 5:16
